High West Distillery was founded in 2006 by David Perkins and his wife, Jane, who moved to Park City, Utah for the love of the Western life (and to make whiskey, of course). Little was known about whiskey in Utah back then, however, High West changed that by putting the state on the map with their skillful blending of sourced whiskeys and their commitment to transparency. They have since tranditioned to being a distiller as well as a non-distiller producer (NDP), but have always drawn on rugged Western culture for inspiration, and one can taste that in their whiskey.
The Bourbon
High West Cask Strength is a blend of bourbons, so an example of High West as an NDP. Though the bourbon tastes slightly unrefined, it is full of flavor and depth. One could say that if it is rather harsh, that would be a nod to the Western lifestyle. High West Cask Strength Bourbon 25K14 draws on several bourbons from Kentucky, Indiana, and Tennessee, then bottled by the High West Distillery. The batch came out at a cask strength of at 58.5% ABV/117 Proof.
Color: Deep Amber
The nose starts with a gentle corn sweetness aroma that springs into scents of a sweet baked breads with notes of cinnamon, brown butter, graham cracker, and banana. The palate is similar in sweetness but adds more depth and spice with notes of oak, vanilla, leather, and baking spices. The finish is long with lingering spices and vanilla.
