Scotland’s the Dalmore Distillery was founded in Alness in 1839, by Alexander Matheson. He sold the distillery to the MacKenzie brothers in 1867, and it was the MacKenzie’s that introduced the Dalmore’s famous emblem of the twelve point royal stag. The distillery stayed family-owned until 1960, when it was acquired by current owners Whyte & Mackay.

Each year, The Dalmore conducts an annual cask assessment, which leads to the Select Editions. The 2025 assessment yielded a 15 year old bottling and an 18 year old bottling. Here, I review the latter.

The Scotch
I have tasted many expressions of Dalmore over the last few years, and I can confidently say this takes the top spot. Everything about this limited, one time expression is exceptional. The inspiration for this select edition is “freshly baked patisserie”. The Dalmore Select Edition 2007 is non-chill filtered, natural color, and matured in ex-Bourbon barrels – finished in Matusalem and Amoroso Sherry casks. This is expression is bottled at 46.7% ABV/93.4 Proof.

Color: Pure Gold

The nose starts with delightful notes of orange zest and baking spices, followed by cinnamon raisin, maple syrup, and caramel. The wonderful tasting continues on the palate with notes of ginger spice, orange zest, vanilla, nutmeg, and fresh Christmas bread. The finish is long and warming with notes of dark chocolate, ginger spice, Earl Grey, and some leather.
