Ed Belfour is a Hall of Fame NHL Hockey Player who was lucky enough to be a part of two Stanley Cup Championship winning teams. An avid whiskey fan with a strong palate too, he has now found a new venture in the bourbon business. This new spirits company, is a family run operation led by Ed, and with his son Dayn.

Now “The Spirit of Champions” to expand its allocation, advance the sport of hockey for youth and retired players, and supports Active Duty Military, Veterans and abused dogs. That is a tall and varied order. The Belfour company produces five expressions, sourced from Woody Creek in Colorado and Southern Distilling in North Carolina; a small batch straight bourbon, bourbon whiskey finished with Texas pecan wood, straight rye whiskey, limited straight rye whiskey, and special edition straight rye whiskey.

The Bourbon
Belfour Bourbon Whiskey Finished with Texas Pecan Wood is the first offering from the Belfour Distillery I have tried. It exceeded my expectations in every way. Although not very complex, it is incredibly consistent. Laying heavy on the sweeter side, this is more of an after dinner/dessert dram. Only being available in select states, if you can find one, don’t hesitate to pick one up. I hope to be able to keep this stocked if I am lucky enough to find more. Belfour Bourbon Whiskey Finished with Texas Pecan Wood is bottled at 92 proof/46% ABV.

Color: Rich Caramel

Rich buttery aromas immediately hit the nose reminding you of when you grandmother or mother was baking in the kitchen. After the second and third nosing more aromas of baking spices, brown sugar, toasted pecans, waffles, and maple candy awaken. The palate is rather similar but thick and oily. On the front are notes of toasted pecans, cracked pepper, and other baking spices followed additional maple, charred oak, apple crisp, vanilla bean, and marshmallow follow on the back end. The finish is medium in length, with lingering notes of pecan pie, vanilla bean, toasted nuts and toffee. It is quite a unique whiskey that lacks some complexity and feels a touch young. Another year or two of maturation could go a long way.
