Australia’s Sullivans Cove Has A 25 Year Old Malt

Sullivans Cove in Tasmania was one of the very first distilleries to jump out of the starting gate after Australia legalized distilling in the 1990s. As a testament to their forerunner status, the distillery has released a 25 year old single malt. Aged in a second fill American oak for a quarter century, the Tasmanian single malt is very simply what the name says it is: a quarter century old malt. No finishes, no fuss. The cask, filled in 1999 and dumped in 2025, has yielded 349 bottles at 47.8% ABV.

Master Distiller Heather Tillot said of the cask, “A benchmark of balancing the interesting and delicious, HH0010 is one of the defining casks in shaping Sullivans Cove’s approach to careful maturation. A profound display of age and character, and an enduring piece of Tasmanian and global whisky history.”

Sullivans Cove is reckoning on strong demand for those 349 bottles, and has set up a ballot system for the opportunity to buy a bottle. The price of $4,500AUD ($2,930) is clearly not thought to be a deterrent. Interested shoppers can enter themselves through this link in a lottery, among which the buyers will be chosen.
