Gambit No. 6 Bourbon Brings Six Separate Barrel Finishes Together
Foley Family Wines & Spirits are marking 30 years in the liquor business this year, but at the same time they have introduced the new Gambit No. 6 Bourbon. The number is not a coincidence, as the bourbon draws on six separate stocks, each with its own barrel finish: Chardonnay, Cabernet Sauvignon, Apple Brandy, Muscatel, Oloroso Sherry, and Tokaji. Gambit No. 6 is also the second release from Chip Tate, the co-founder and former master distiller of Balcones Distillery, since he joined the company.
Gambit No. 6 started with a classic 6 year old Kentucky Straight Bourbon, made from a mashbill of 78% corn, 10% rye, and 12% malted barley (this is the same mash bill as Heaven Hill’s various traditional recipe style bourbons). To create the blend, roughly 15 percent of the whiskey was finished for 19 months in Cabernet Sauvignon American Oak barrels sourced from Ferrari-Carano Vineyards & Winery’s PreVail Wines. A secondary portion of the whiskey – approximately 85 percent – was finished for three months in Chardonnay French Oak casks also sourced from Ferrari-Carano. Then, the bourbon finished in Chardonnay casks was divided between the Oloroso Sherry, Muscatel, Apple Brandy, and Tokaji barrels, and aged for an additional 12 to 16 months. The barrels were housed at the Minden Mill Distillery near Lake Tahoe, Nevada.
The new whiskey is 92 proof and offered at $69.99 a bottle.
